Commissary Cooking - Pad Thai Noodles

Ingredients:
5-6 chopped garlic cloves
2 tbsp chopped shallots
1/2 cup fresh shrimp
1/4 cup fish sauce
1/4 cup sugar
2 tsp tamarind concentrate mixed w/ 5 tsp water
1/4 cup chopped chives
1/2 cup broken-up peanuts
1/2 cup soy-sauce marinated, diced firm tofu
1 pkg rice noodles, soaked in water for 10-20 minutes
1 beaten egg
1 cup bean sprouts

Instructions:
1. Sauté garlic and shallots
2. Add shrimp
3. Once shrimp are opaque and pink, add fish sauce, sugar, tamarind mixture, chives, peanuts, and tofu
4. Add noodles
5. Cook for 4-5 minutes
6. When noodles are soft, add egg to the mixture, stirring with one hand while drizzling with the other
7. Add bean sprouts
8. Cook for 4-5 minutes, and serve
